Il Mio Bianco
This wine is a blend of Pignoletto and Sauvignon, both white vines grown in the hilly area around Forlì in medium compact soil facing north-east.
We pay the greatest attention to ripening and to the productive balance of the vineyard as important starting points leading to a product of good quality, with features suitable to give a high quality wine.
Grapes are picked in the second decade of September after a careful checking of the ripening phases.
Vinification is run having in mind a modern wine, with its own character, handling grapes with the utmost care from the very first moment they are picked, and making use of modern technologies to preserve the product from oxidation, thus praising the varietal and aromatic grapes features which will pass on the future wine.
The wine is kept in small stainless steel tanks till the following spring and then bottled.
"Il mio Bianco" is a quality wine, light straw-yellow coloured with greenish highlits; the olfactory sensation is pleasant, with peculiar flowery and fruity scents recalling peach and sage, fresh and fragrant, quite persistent and harmonious. The gustative perception is warm and smooth, matched by a fair salty balance that invite to tasting.
Serve at 10-12° C in medium size goblets as aperitif and with starters; pairing light first courses with fish or delicate second courses with white meat, steamed fish or fish in salt crust.
