we choose the vintage time; carefully selecting grapes both in vineyard and in cellar; grapes temperature controlling; whole grapes pressing; short cold static decanting of must. <Fermentation: 50% steel and 50% barrel; 8 months on yeasts with noble lees moving.
Refining: 8 months in steel and in oak casks on noble lees; 6 months in bottle. Best refined after 3 years; best served within 8 years.
