The Fontanelle business consists of four farm buildings on 55 hectares of land, west of Chianciano.
Being a small family-run business has enabled its owners to produce a limited yet prestigious selection of wines:D.O.C.G. Chianti Superiore and I.G.T Toscana, which have now become part of the business alongside the traditional production of extra-virgin olive oil, recognised today as Terre di Siena DOP and Toscano IGP.
Our dedication derives from a love of the land, which has led to the breeding ofCinta Senese DOP pigs raised in the wild, a Tuscan tradition. Arboriculture systems for chopping valuable wood found in small areas of the business also complete the description of the business.
Other investments have strengthened the commercial side of the business, such as the restoration of an old wine cellar, which provides an excellent environment for the maturation of the wines as well as offering the public an opportunity to taste and compare first-hand the products we sell.
OUR VINEYARDS
Riccardo Rosati, completely dedicated and full of experience that has been handed down from generations, looks after the vineyards of high density and low yield per hectare, ensuring that the wine is of high quality without losing its original flavor.
OUR OLIVE GROVES
The most important and representative of the business is the production of extra virgin olive oil, recognized as D.O.P. Terre di Siena and I.G.P. Toscano, produced from the traditional variety of olives (Moraiolo, Frantoio, Leccino and Pendolino) and found between Vadichiana and Valdorcia.Such olives are distinguished by their fruity and fragrant scent and their delightful green colour. The centuries-old olive groves are situated next to newly-planted groves.
OUR WINE
The wine production, which is exclusively from the owner’s vineyard, is intentionally limited. The choice of looking after small areas of land containing the best characteristics of soil, the optimum position and the decision to plant native vineyards with a density of 5-6000 groves per hectare have awarded the owner with high quality wines that are among the more traditional Tuscan classics, but well-structured and complex.
OLIVE OIL
Without a doubt, the olive cultivation is the activity that involves and bonds the whole Rosati family, with its deep Tuscan roots. In this region, oil has always been a precious object, giving importance to local dishes made of simple and few ingredients. The wrinkled trunks of the centuries-old olive groves tell the story of the Fontanelle business, while their vitality shows the love and care that is given to them year after year.

Prosciutto (unsmoked cured ham),Guanciale (unsmoked bacon prepared from the pig’s cheek) Capocollo(seasoned cured ham) Salami,Sopressate (Italian aged salami), Sausages, Lombino, Finocchiona(flavoured Tuscan salami with fennel seeds) and Lard.
All our cured pork meats come from the"Cinta Senese" pigs which are raised in the wild, following the Tuscan tradition.
