An early harvest, which starts already in the third decade of August, allows Chardonnay grapes to keep their freshness and the aromatic intensity of the wine to come.
Vinification is extremely delicate and aiming at getting a very clean must; primary fermentation takes places in small stainless steel tanks at controlled temperatures, which can accordingly be strictly reduced.
Thanks to this peculiar technique we get a very fresh and delicate wine, particularly suitable to become a high quality sparkling wine.
With this aim after the primary fermentation the wine is given a short pause to get a natural clarification, after which the wine undergoes foaming and then bottling; it is thus available since January following vinification.
Aurora is a natural sparkling wine of high quality, light straw-yellow coloured with greenish highlits; the perlage is fine and medium persistent, the olfactory sensation is fresh and fragrant, slightly fruity with a delicate apple scent. The gustative perception is slightly acidulous and dry, yet harmonic and pleasant. Serve at 10-12° C in medium size goblets every time during the day as a "lively" and refreshing break, straight as an aperitif or to prepare slightly alcoholic drinks.
