Denomination: D.O.C.G. Chianti – Red dry
Variety: 95% Sangiovese, 5% Canaiolo Nero
Provenance: Presine, Burraia
The vineyards are located in a round hill area, 300 m sea-level with clay soil rich in potassium, yellow sands (tufa), shells and coral fossils. Plant system is mixed between guyot and spur cord with 3500-5000 vines per hectare. In the early summer a green harvest is made.
Harvest: manual harvest starting in late September with a first bunch- selection.
Wine-making: Ferentation with maceration process carried out in steel tanks (Ganimede sistem) at a controlled temperature of 25/27°C, for 15-20 days. Malolactic carried at the end of the process.
Ageing period: After its fermentation period Chianti starts ageing in traditional barresl from 25 to 100 hl. The aging period is 1 year and it ends with few months in the bottle.
Tasting notes: Deep red color. Red fruits aroma, persistent and complex. Smooth tannins mixed with red berry fruits taste. Well balanced with a good acidity; round with a complex and elegant body.
Serving temperature: 18°C
DOCG Chianti Il Greppo matches well with mixed cold meats and medium dried cheeses, pasta, red and white meat, light spicy food.
