The peculiar characteristic of the 2010 vinification was the technique for extracting the noble materials from the skins; this took place practically through only the maceration instead of through the pumping-over as usual. The must and then the new wine stayed on contact with the skins for 18-25 days with a substantial increase in time compared to the past.
The Chianti Superiore is the type of this denomination with a particular level of excellence. This one produced by Donatella Cinelli Colombini is born in the vineyards at Fattoria del Colle, the ones with a lower yield, better exposed to the sun and in the majority of cases of more mature age.
