LAMBRUSCO DI SORBARA D.O.C. "RIMOSSO"
The Lambrusco di Sorbara D.O.C. “Rimosso” is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting. Maceration takes place in refrigerated press.Alcoholic fermentation is done in stainless steel tanks under controlled temperature.
After resting at least six months, in order to improve the limpidity, the wine is ready to be bottled.
Bottles are stored in a constant ambient temperature of 12°C, which allows the wine to mature in the presence of its natural yeasts.
It is a ruby red wine with violet hints. Notes of ripened red fruits can be distinguished at the nose, with absolute verticality and definition of the perfumes.
The palate perceives the complex bouquet of wild cherry, with juicy and velvet notes in the end.
To be served at 12°C.
