The vineyards are located in a round hill area, 300 m on sea-level with clay soil rich in potassium, yellow sands (tufa), shells and coral fossils. Plant system is mixed between guyot and spur cord with 3500-5000 vines per hectare. In the early summer a green harvest is made.
Harvest: manual harvest starting in late September with a consistent bunch- selection.
Wine-making: Fermentation with maceration process carried out part in wood open tanks and part in steel tanks (Ganimede system) at a controlled temperature of 27/30°C for 30 days. Malolactic carried at the end of the process.
Ageing period: After its fermentation period Vino Nobile di Montepulciano starts ageing in wood, both in traditional barrels from 25 to 100 hl and in French oak barriques. The ageing period is 2 years and it ends with few months in the bottle.
Tasting notes: Deep ruby red color with garnet reflections, ripe berry aroma, sweet tobacco, coffee and dark chocolate. Elegant with silky tannins, refined finish of mineral notes and a touch of vanilla. Persistent, well balance with a round body.
Serving temperature: 18°C
Vino Noblile Il Greppo matches well with red meat, deer, wild boar and grilled pork. Ideal with home-made egg pasta with meat sauce.
